Raspberry Sour Cream Coffee Cake
3 C. flour
1 C. sugar
1 tsp. baking powder
2 tsp. soda
2 sticks butter
8 oz. sour cream
1 tsp. vanilla
2 eggs
1 can raspberry pie filling
Mix first four ingredients, then cut in 2 sticks butter with pastry blender. Add sour cream, vanilla and eggs. Batter will be very thick and heavy. Grease 9x13 pan. Spoon 1/2 of batter into pan. Spread pie filling over the batter. Spoon remaining batter on top of pie filling (when baking it will rise & fill in open spots).
NOTE: You can use any flavor pie filling you like - also good with blueberry.
